These are channel icons, you can do this by editing the channel and then click on the edit (pencil) on the icon.

You just set the icon there, if you want the icons you mentioned above, you need to upload them first.
The Icons you saw on the channels were uploaded by the server admins them self.
These Icons for example are uploaded by a TeamSpeak Employee. I don’t exactly know where they come from or who the copyright owner is, but If I guess there is a high chance that they are created by TeamSpeak, as some kind of marketing material or specifically for this use.
