The latest version was launched in March 2023 on github. Considering the length of the development process, how will TS5 surpass Discord? Additionally, is there a rollout plan outlining when future updates will be released?

Talking about the client or the servers?
You shouldn’t refer to Github regarding the development status of the TeamSpeak 5 client.
Last year the client has received updates fairly regularly.
The latest version of the client at the time of writing is from December 12 last year.
This is in the server category. The server development is ongoing but the latest versions are not published on GH. You can spot the newer versions e.g. on the public community servers. Nonetheless, I’d recommend against deploying the version on GH, it’s just not worth it.
